Patrice Falantin

PATRICE FALANTIN - EXECUTIVE CHEF

A graduate of the Lycee de Hotelier de Toulouse in France, prior to migrating to Australia Patrice worked as an instructor at Cooking School France in Paris and was private chef for a French government minister.

After working in the United Kingdom at Harrods London and the exclusive Hyde Park Regent, Patrice moved to Sydney and worked at the five star Four Seasons Hotel for more than five years.

SYLVAIN PASDELOUP - FOOD AND BEVERAGE DIRECTOR

Mr Pasdeloup has worked for a number of leading French restaurants, including the Michelin starred Relais and Chateaux Longcol and the Relais and Chateaux Relais de la Poste. Mr Pasdeloup also has extensive experience in five star hotels having worked for Hyatt hotels throughout Paris, Concorde Hotel and most recently Sofitel Gold Coast Broadbeach. Mr Padeloup’s passion for food and wine means he is always on the hunt for exciting new products and concepts and is constantly introducing these ideas to Cuvee and Thyme2 – much to the delight of guests.
