Sofitel Brisbane Central is pleased to announce the appointment of Gareth Woolcock as the new À La Carte Chef De Cuisine.

Beginning his career in a quaint seaside café in Perth, Chef Woolcock’s drive to continue his culinary journey led him to the globally recognised Australian city of great cuisine, Melbourne. For six years, Gareth thrived in restaurants and cafés within St Kilda and Chapel Street, constantly improving his knowledge and skills in different environments before deciding to move to London in 2009.

Woolcock travelled to over thirty countries while living in London, where he reveals his appreciation for worldwide cuisines and career influence began. After gaining such comprehensive gastronomic expertise, Gareth moved to Brisbane in 2011 to continue his career path where he began working within the hotel industry and successfully advanced to Sous Chef at the Pullman in 2016.

As a career-driven professional, Chef Woolcock was directly involved in the opening of Howard Smith Wharves in 2018, where his keen interest in modern food trends and culinary creativity aided in his association with menu design and implementation.

Today as the á la carte chef for Sofitel Brisbane Central, Gareth hopes to retain the proud history of Privé249 as a high end, modern European bistro with a French influence. His passion for fresh food and quality dishes, as well as his work in culinary innovation, helped create the updated Privé249 menu where Chef himself recommends the sovereign lamb back strap with whipped feta, chorizo and vine tomato jus.

His execution of clean, simple and sophisticated food showcases his knowledge of the market and his direction for the hotel. Chef Woolcock is eager to utilise his innovation and expertise to see Privé249 as one of the top hotel restaurants in Brisbane.
