In 2018, Amalle proudly became an Australian citizen, marking the beginning of a new chapter in her life. She joined Sofitel Brisbane on May 22, 2019, as a Buffet Runner, showcasing her passion for the hospitality industry. Although her role primarily involved supporting the buffet operations, Amalle's ambition drove her to pursue a career in commercial cookery. On September 9, 2019, Amalle took a significant step forward by starting her apprenticeship in Commercial Cookery. This decision exemplified her determination to enhance her culinary skills and knowledge. However, fate had other plans, as the COVID-19 pandemic disrupted the industry, putting Amalle's apprenticeship on hold. Despite the challenges, Amalle remained a dedicated employee of Sofitel Brisbane, continuing to work as a first-year apprentice and showcasing her loyalty and commitment.

As the industry gradually recovered, Amalle's perseverance paid off. She resumed her apprenticeship and continued to excel in her studies and on-the-job training. In mid-2022, Amalle's hard work and dedication earned her a well-deserved promotion to a second-year apprentice, a testament to her growth and culinary expertise. By December 2022, she progressed to a third year apprentice, demonstrating her continuous improvement and passion for her craft. Amalle's journey reached a milestone on May 29, 2023, as she successfully completed her apprenticeship. After completing her major assessment in planning and costing menus, and logging 48 services effectively as a Cook, she emerged as a qualified Commis Chef. This achievement not only recognized her culinary skills but also celebrated her perseverance and commitment throughout her journey.
